A process, and corresponding facility, for acidogenic fermentation of a fermentable substrate by a microbial consortium in a single-stage reactor, which is intended to provide at least one fluid effluent comprising a mixture of organic acids having from two to at least five carbon atoms and a gaseous effluent. The process comprises a step of advanced control of the acidogenic fermentation carried out, by virtue of a control-order system which makes it possible to maintain throughout the advanced control step in the reactor: the volumetric loading of organic matter, the hydraulic residence time, the residence time of the particulate matter, the temperature and the pH, in predetermined value ranges.
