A system for placing perishable or heat-sensitive foodstuffs (3) under a controlled atmosphere, in particular for transporting and storing these foodstuffs on pallets (2), comprising an airtight casing (1) surrounding and enclosing said foodstuffs, enclosing or not enclosing a pallet on which the foodstuffs can be placed, which system comprises the following elements: - a means for introducing (9) a gas or gaseous mixture into the casing in order to produce the desired controlled atmosphere; - a means (7) for extracting the gas and especially gaseous CO₂ from the inside to the outside of the casing; - a means (8) for extracting air from the inside to the outside of the casing in order to enable the egress of air from the inside as the gas or gaseous mixture is injected; characterized in that the casing (1) is isothermal and in that the system comprises a means for supplying (5) a cryogenic fluid, for example dry ice, making it possible to maintain the temperature of said foodstuffs within a desired range.
