According to the present invention, an aged sweet potato manufacturing method is capable of manufacturing an aged sweet potato with significantly improved nutritional value and functionality at a low cost by aging sweet potatoes in stages with rice bran and rice straw. The method includes: a step (a) of manufacturing a first aged sweet potato; a step (b) of manufacturing a second aged sweet potato; a step (c) of manufacturing a roasted sweet potato; a step (d) of manufacturing a third aged sweet potato; and a step (e) of manufacturing a frozen sweet potato by freezing the third aged sweet potato.
