The present invention relates to a bioconversion-fermentation method and a mass production method for fermented mixed grain powder to alleviate diabetes using composite fermentation microorganisms. More specifically, the present invention relates to a method of producing fermented mixed grain powder to alleviate diabetes by using a bioconversion-fermentation method for mixed grain powder with a functional lactic acid bacterium, yeast and Bacillus subtilis. The fermented mixed grain powder produced according to the present invention consists of various functional amino acids, especially multiple amino acids having an antidiabetic function. It was confirmed that fermented grain powder, researched and developed through an analysis of the antidiabetic function using an anti-diabetic animal model, has an antidiabetic effect, and fermented grain powder, researched and developed through anti-diabetic-related molecular genetic studies, has an effect of inhibiting diverse gene expression associated with diabetes induction.;COPYRIGHT KIPO 2019
