The present invention relates to a method for producing HGF through the three-dimensional culture of salivary glandular stem cells and to a composition for preventing or treating xerostomia, which comprises HGF as an active ingredient. More particularly, the present invention relates to a method for producing HGF through three-dimensional scaffold culture of salivary glandular stem cells or salivary gland-derived progenitor cells, and to a composition comprising HGF as an active ingredient for preventing or treating salivary gland dysfunction, particularly xerostomia. The three-dimensional culture of salivary glandular stem cells revealed that the expression of HGF was increased compared with other active factors. Thus, HGF can be used for the development of therapeutic agents for preventing and treating salivary gland dysfunction diseases, particularly xerostomia.
