The present invention relates to a method for extracting a liquid extract from a dried illicium verum foeniculum vulgare, and a method for preparing a pork rib soup added with an illicium verum foeniculum vulgare extract. The method for extracting a liquid extract from a dried illicium verum foeniculum vulgare of the present invention comprises: a water absorption process; a steaming container heating process; and an illicium verum foeniculum vulgare vacuum cooling extraction process. The method for preparing a pork rib soup added with an illicium verum foeniculum vulgare extract of the present invention comprises: an ingredient heating process; a broth vacuum cooling extraction process; a broth seasoning addition process; and a broth meat smell removing process. Therefore, a pork rib soup having excellent distribution storability and preservability can be prepared.
