The present invention relates to a functional makgeolli with enhanced proteins using crickets and a method of producing the same and, more specifically, to a method of producing a rice makgeolli using crickets, which has a high content of proteins and desirable sensory properties and a rice makgeolli produced thereby, wherein the method comprises: a step of preparing cricket powder by cleaning, drying, and grinding crickets; and a step of producing makgeolli by adding the cricket powder thereto. The method of producing a rice makgeolli using crickets according to the present invention may address the inventory problem of government reserve rice by making use of rice as the main ingredient; and may further provide a new well-being style makgeolli capable of promoting the health of consumers by allowing the consumers to simultaneously ingest the nutritional components of rice and the nutritional components of crickets. Further, by making use of crickets, which were never used in the conventional makgeolli production, the present invention may contribute to an increased income in the farms growing edible insects.;COPYRIGHT KIPO 2019
