The present invention relates to a rice cereal manufacturing method using rice powder. The rice cereal manufacturing method using rice powder comprises: a mixing process (first process) of mixing 3-7 parts by weight of powdered cellulose, 3-7 parts by weight of white sugar, and 0.3-1 part by weight of refined salt based on 100 parts by weight of rice powder in a mixer for 5-15 minutes; an extruding process (second process) of mixing water with the rice mixture mixed in the first process and extruding the mixture from an extruder; a drying process (third process) of drying the extruded rice product extruded in the second process in a hot air dryer to have the moisture content of 5%; and a cooling process (fourth process) of cooling the dried rice product dried in the third process to be at the temperature of 20-30°C. The rice cereal using rice powder manufactured by the method contains enough nutrients to substitute meals, snacks, and diet food by being made of rice and increases customer satisfaction by manufacturing rice cereal of various colors with rice powder or rice powder and natural ingredients (pumpkin powder, spinach powder, strawberry-juice powder, beet powder) without using artificial pigments.
