The present invention relates a meat curing apparatus, which quickly discharges foreign substances generated during a meat curing process to the outside and then purifies the foreign substances so as to be reused, and which allows a corresponding meat to be evenly permeated with a curing fluid. More specifically, the meat curing apparatus comprises: an accommodation part (100) formed in the shape of a hollow box with an openable top to accommodate a curing liquid therein; a mounting member provided to accommodate meat therein and mounted inside the accommodation part so as to allow the meat to be cured by the curing liquid; a supply part connected to the accommodation part by a pipe and provided to cause, in response to a control signal, the curing liquid to be supplied and at the same time, intermittently circulated, and also to purify the circulating curing liquid; a movable member configured to be inflated and deflated by air provided from the outside in response to the control signal and to cause the meat to move due to an external force, wherein the external force is exerted on the mounting member inside the accommodation part due to the inflation and deflation; a suction member configured to suction, in response to the control signal, an absorption liquid that contains foreign substances suspended due to the density of the curing liquid inside the accommodation part during the curing of the meat, and to provide the absorption liquid to the supply part so as to enable purification to be carried out; and a dust collecting member configured to rotate, in response to the control signal, to intermittently discharge an air current onto the surface of the curing liquid accommodated inside the accommodation part so as to allow the absorption liquid to be collected in one direction.
