The present invention relates to a method for mass production of a ginsenoside Rh2 mix. In the present invention, an Rg3 mix is obtained by adding an organic acid and treating heat in a PPD mix, and a beta glucosidase obtained by using a recombinant GRAS strain is treated in an Rg3 mix to produce an Rh2 mix. Thus, mass production of the Rh2 mix using beta-glucosidase, known to be difficult, has been achieved, and it is possible to produce the Rh2 mix with a high yield even at a high temperature, and the same can be mass-produced for industrial use because the process is simple and more economical than using an enzyme directly.
