The present invention relates to an additive composition for confectionery or bakery products using sweet peppers, a method of preparing the same, and confectionery or bread prepared by using the additive composition. More specifically, the method of preparing the additive composition for confectionery and bakery products using sweet peppers comprises the following steps: removing non-edible parts of sweet peppers; washing the sweet peppers from which the non-edible parts are removed; finely cutting the washed sweet peppers; freeze-drying the finely cut sweet peppers or drying the finely cut sweet peppers with hot air after steaming the same; and grinding the dried sweet peppers to make powder. Confectionery or bread can be produced by using the prepared additive composition. According to the present invention, it is possible to improve the flavor of confectionery or bread as well as to increase nutritional values of the confectionery or bread by adding insufficient nutrients. It is possible to delay aging of bread and to extend a storage period of the same. In addition, it is possible to promote the consumption of sweet peppers, thereby increasing the consumption of agricultural products.;COPYRIGHT KIPO 2019
