FIELD: veterinary medicine.;SUBSTANCE: invention relates to production technology and veterinary-sanitary expertise, namely to determination of quality of milk and fermented milk products and their release for implementation. Production raw milk and ready lactic acid production control method involves raw milk testing before production for acidity, fat content, density, on the number of somatic cells using standard methods for determining the presence of mastitis milk, production of fermented milk products - sour cream, curd, cheese, butter, quality control of the finished product and preparation of milk and dairy products for implementation. At that, for rapid diagnosis of raw milk by the amount of somatic cells in volume of 100–200 mcl is applied on a slide and dried in air flow at temperature of 40–50 °C to moisture content of 20–30 % presence of mastitis milk is diagnosed during 15–20 minutes in a horizontal position and when detecting in the sample along the edge of the drop and in its center of radial cracks. Then bacterial population is determined by amount of lactate in samples of raw milk using BIOLAC indicator biosensor analyzer, and after production is additionally investigated for presence of admixture of curd in sour cream, which in amount of 30–50 mg is dissolved in 150–200 ml in water at temperature 40 °C, and in the presence of falsification, fat floats to the surface, and curd casein, curdled milk and other impurities settles on the bottom.;EFFECT: invention provides increased accuracy of raw milk and fermented milk products quality assessment in industrial production conditions with reduction of time.;1 cl, 2 dwg, 1 tbl, 1 ex
