To provide a method that can produce a fermented milk having a high SNF and a high acidity.SOLUTION: In the method for producing fermented milk according to the present invention, lactose-decomposed raw material milk is fermented. As used herein, "lactose-decomposed raw material milk" is obtained by decomposing lactose of raw material milk containing lactose and having a nonfat milk solid content of 10 wt.% or more. And, in this method for producing fermented milk, a fermented milk having a high non-fat milk solid content and a high acidity is obtained. Here, the decomposition of lactose preferably is carried out using lactase. Also, the fermentation of lactose-decomposed raw material milk preferably is carried out using a lactic acid bacteria starter, particularly Lactobacillus bulgaricus and Streptococcus thermophilus.SELECTED DRAWING: Figure 1
