PROBLEM TO BE SOLVED: To provide a method for producing a chymosin mutant having improved curdling properties, and to provide the chymosin mutant. SOLUTION: The method for producing an isolated chymosin polypeptide variant is as follows: (a) Modification is made at one or more positions in a parent polypeptide having chymosin activity, wherein the modification is made. Includes substitutions, deletions or insertions at at least one amino acid position corresponding to any of positions 77; 154; 156; 212; 224; 256; and 367; and (b) step (a). Includes producing and isolating a modified polypeptide of, and thereby obtaining an isolated chymosin polypeptide. [Selection diagram] Fig. 2
