To make strong rich taste feeling in foods.SOLUTION: A dietary fiber processed article is manufactured by measuring absorbance at 480 nm of 1 wt.% solution while heating ones containing water soluble dietary fiber or water soluble dietary fiber and water, adjusting the absorbance at 0.03 to 1.2, and adjusting a solid component at 50 to 90%. By heating the water soluble dietary fiber, rich taste is enhanced. The dietary food processed article has absorbance at 480 nm of the 1 wt.% solution of 0.03 to 1.2, and strong rich taste can be added by adding the same to coffee beverage with low saccharide, saccharide off, or saccharide disuse, confectionery such as candy, beverage, and seasoning.SELECTED DRAWING: None
