An object of the present invention is to provide a softly baked fish product having a softness that can be sufficiently chewed even by a person with difficulty in chewing, and having no off-flavor and off-flavor, and a method for producing the same. The above-mentioned problems are solved by providing a soft and burned fish fillet having a softness of 350 gf or less and a load necessary for pushing a ball 3 mm or less and having no off-flavor and off-flavor, and a method for producing the same.
