It is intended to provide a soft-boiled fish fillet having no off-flavor and off-flavor and a method for producing the same, even if the person has difficulty chewing, and has a diameter of 15 mm under the temperature condition during eating. The above-mentioned object is achieved by providing a soft-boiled fish fillet having a softness of 350 gf or less in load required for pushing a metal ball of 3 mm or less and having no off-flavor or smell, and a method for producing the same.
