PROBLEM TO BE SOLVED: To provide a fermented malt beverage with mild bitterness characterized in citrus flavor and sweetness, low in bitterness and progressed in the palatability of flavor and taste by producing a beer taste beverage in such a manner that the sugar composition of brewing raw material, the yeast to be used, the using amount of hop or the like are controlled.SOLUTION: The fermented malt beverage characterized in citrus flavor and sweetness and also reduced in bitterness is produced by controlling BU value to 20, -citronellol/BU value to 0.5 and the total sugar quantity/the BU value to 0.2 by using yeast high in a -citronellol throughput and low in maltose assimilation performance and performing fermentation in such a manner that the assimilation of maltose is suppressed, and also the using amount of hop is reduced.SELECTED DRAWING: None
