elaboration of aromatic extract from industrial residues of white shrimp (litopenaeus vannamei) the present invention allows to elaborate aromatic extract from industrial residues of white shrimp (litopenaeus vannamei). the process of the present invention, consists in the elaboration of aromatic extracts with flavor and aroma of shrimp, from solid industrial residues (cephalothorax and shells) of shrimp of the species litopenaeus vannamei, through cooking and freeze drying process. the invention has potential for the scientific community, as these extracts can be applied as flavors, flavors and dyes in various products of the food industry, including meat products, bakery products and sweets.
