The present invention relates to the process of obtaining highly stable emulsions and formulating highly stable emulsions that comprise components that attribute emulsifying, preservative, antimicrobial and foaming activity, using ionic liquids (LIs). The emulsion formulations of the present invention are of the oil in water (O / W) type with high stability, greater than 4 months, up to one year. The formulations preferably comprise 0.1-80% (w / w) of oily phase and preferably 0.01-10% (w / w) of ionic liquids preferably selected from derivatives of choline and fatty acids or ethanolamine and fatty acids. This invention is inserted in the field of food engineering, chemical engineering, biochemistry and chemistry, with application in the food, cosmetics, pharmaceutical and agricultural industries. The components selected specifically to produce the said formulations of highly stable emulsions - product of the present invention have simultaneously emulsifying activity and antimicrobial preservative with a longer shelf life, reaching up to one year, of commercial interest for the production of bio products or natural products or for industries that use emulsions as additives, adjuvants, or as a basis for formulating products, such as cosmetics, lubricants, cleaning products, dermopharmaceuticals or foods.
