The present invention refers to a dairy- and alcohol-free beverage based on Agave salmiana juice added with acid lactic bacteria with probiotic potential: Lactobacillus delbrueckii ssp bulgaricus or lactobacillus delbrueckii ssp delbrueckii, which present viability of 106 UFC/mL to 1012 UFC/mL, with an optimal of 107 UFC/mL. The beverage has a useful life of from about 18 to 21 days, optimal of 19 days without preservatives. The beverage has a translucent beige color, a slight characteristic odor to Agave juice, a sugary and slightly acid flavor. The beverage has a pH of from about 2 to 4.4 (optimal of 3.8) and 5 to 20 (optimal 15) Brix degrees. The beverage is flavored with natural essences of orange, lemon and coconut, in a 0.5% to 10% (optimal of 1.5%) with regard to the total volume of Agave juice.
