Leuconostoc mesenteroides strain, starter culture that contains it, for running of the leaven and application of the strain and the starter culture for production of bakery products

The new strain Leuconostoc mesenteroides ZFS 127 is the subject of the notification,deposited in the Industrial Cultures Collection of the Institute of Biotechnology of the Agricultural - Food Industry. Prof. Vaclava Dubrovnik in Warsaw, under KKP 2080 and comprising a starter culture,containing at least 2,0x 1011 jtk /g Leuconostoc mesenteroides Sz127 KKP 2080 in the form of biomass or at least 1,0 x 1011 jtk /g of these bacteria. The new strain Leuconostoc mesenteroides ZFS 127 is characterized by this,that it has the ability to produce exopolysaccharides in large quantities at low temperatures and in a short time. A starter culture containing this strain is used to initiate fermentation of bakery ware.
