This utility model relates to the process of producing banana (Musa acuminata x Musa balbisiana) blossom longanisa using Kluai namwa variety of Banana blossom as one of the ingredients. Preparation of the banana blossom loganisa is done by gathering the banana blossom and washing thoroughly with clean water, plucking and discarding the matchstick-shaped pistil of the banana blossom and soaking in acidic water, draining and chopping the banana blossom into 1 centimeter size, boiling the chopped banana blossom for 20 minutes, draining and squeezing the boiled banana blossom and mixing all the ingredients together until well blended, stuffing the mixture into cleaned pork intestines and dividing into 2 inches long then tying with a string or butchers twine, packing the banana blossom in a clean plastic container before storing in the freezer.
