The utility model discloses a method of manufacturing dehydrated seriales involving the steps of sorting, washing, adding of sodium metabisulfite, blanching, freezing, thawing, removal of the pith, cooking in syrup, soaking, draining, drying, cooling and sweating. Seriales fruits is an underutilized and seasonal agricultural crop. As an agricultural crop it is highly perishable. To maximize the utilization of this crop, conversion of the fruit into a high value product is one of the strategies to address these problems. Converting raw seriales to dehydrated product does not only able consumers access the fruit for consumption during off season, most importantly it effectively extends the shelf-life of the commodity.
