The present invention relates to processes for determination of sprouts/germ buds contaminated with microorganisms, in particular with pathogenic microorganisms inter alia for the production of bakery goods and/or precursors thereof, in particular pre-doughs and/or sourdoughs. Also claimed are the degerminated sprouts/germ buds, the use of a mixture of dough and the germinated sprouts/germ buds and bakery goods produced from the mixture.
