The present invention relates to a biocatalyst for the synthesis of lactitol-derived oligosaccharides (LaOS), with potential prebiotic properties, which can be used to improve the industrial production of functional foods. The biocatalyst comprises one or more β-galactosidase enzymes immobilised, by means of a covalent bond, on a mesoporous silica support. The invention also relates to a method for synthesising oligosaccharides for the production of functional foods.
