The present invention relates to a method for preparing a beer yeast extract containing high amounts of vitamins B1 and B2, and a food and a health functional food which contain a beer yeast extract prepared by the method. The beer yeast extract according to the present invention is prepared from beer yeast generated as a by-product during a beer preparation process, by using edible vinegar and edible enzymes, so as to contain high amounts of vitamins B1 and B2, and thus can be economically produced and can be utilized as a safe food and a health functional food.
