The present invention relates to a production method of buckwheat sprouts with the increased content of a specific phenolic compound using pectin treatment and, more specifically, to a production method capable of efficiently increasing the content of chlorogenic acid, p-coumaric acid and rutin by treating pectin. When the buckwheat sprouts produced by the production method of the present invention are utilized in the production of cosmetics, health functional foods or pharmaceuticals, the buckwheat sprouts are expected to have excellent efficacy.
