The present invention relates to a method for manufacturing gouda cheese in which mixed herbal ingredients are added and gouda cheese in which mixed herbal ingredients are added, manufactured by the method, wherein the method comprises steps of: (a) preparing a mixture by mixing Pseudocydonia sinensis, Mentha Canadensis, and Cornus officinalis; (b) adding water to the mixture prepared in step (a), extracting, filtering, and sterilizing the same to prepare an extract; (c) mixing the extract prepared in step (b) with sterilized milk; and (d) adding a starter to the mixed milk of step (c), culturing the same, adding rennet to remove whey, pressing and molding the same, followed by salting, drying, and aging the same. The present invention has an effect of providing gouda cheese with excellent palatability.
