The present invention relates to an anti-inflammatory composition comprising, as an active ingredient, a Caryopteris incana extract with an increased inflammation-inhibiting effect by being fermented with lactic acid bacteria, and to a producing method thereof. Inventors of the present invention have confirmed that the Caryopteris incana extract fermented with lactic acid bacteria effectively suppresses the inflammatory reaction of cells and has low cell toxicity compared to a non-fermented Caryopteris incana extract since the Caryopteris incana extract fermented with lactic acid bacteria, Lactobacillus plantarum, reduces the expression of inflammatory mediators induced from Raw 264.7 cells to lipopolysaccharide (LPS). Therefore, the present invention is expected to be able to secure excellent herbal resources with high productivity of pharmacologically active compounds by establishing a fermentation system, reducing the toxicity of Caryopteris incana, and increasing an inflammation-inhibiting activity, and the solid fermentation extract of Caryopteris incana can be useful as an anti-inflammatory health functional food composition and an excellent material for developing a new inflammatory agent.
