The present invention relates to a method for predicting moisture content of agricultural products during drying using dielectric properties, capable of predicting moisture content rapidly and accurately and remarkably reducing costs. According to the present invention, the method for predicting moisture content of agricultural products during drying using dielectric properties comprises: (A) obtaining basic data of dielectric properties according to the moisture content during drying agricultural products; (B) setting the output of a drying chamber; (C) predicting the dielectric properties according to the drying time before drying the agricultural products and obtaining the predicted data of the dielectric properties; (D) starting drying by irradiating microwaves to the agricultural products; (E) measuring the dielectric properties of the agricultural products according to the drying time during drying; (F) comparing and analyzing the dielectric properties during the drying measured in the step (E) with the basic data of the dielectric properties obtained in the step (A) and the predicted data of the dielectric properties before drying obtained in the step (C); (G) confirming whether the measured dielectric property value during the drying has reached the dielectric properties and the moisture content corresponding to the desired value; and (H) continuously performing the drying process on the agricultural products when the measured dielectric property value during the drying has not reached the dielectric properties and the moisture content corresponding to the desired value and terminating the drying process when the measured dielectric property value during the drying has reached the dielectric properties and the moisture content corresponding to the desired value.;COPYRIGHT KIPO 2020
