FIELD: fishing industry.;SUBSTANCE: invention relates to fish industry, in particular, to a method for production of combined fish mince. Combined fish mince production method involves combining fish mince and a protein component with subsequent stirring and freezing. Fish raw material is represented by washed or non-washed coarse fish mince, and the protein component used is freshly screened roe or salted caviar of ordinary fish. Caviar is salted with dry culinary salt in amount of 3.5–3.8 % of caviar mass, mixed and held for 5–10 minutes on a sieve. Components are combined in ratio of 70–75 % of minced fish and 25–30 % of caviar.;EFFECT: production of combined mince of fresh-water small-size, less-used types of fish and caviar of partial fish species, enhancement of nutritive and biological value of fish mince and expansion of the range of produced fish products.;1 cl, 4 ex
