摘要

PROBLEM TO BE SOLVED: To provide a method for producing yeast as a method for containing indole having a taste improving effect in distilled liquor. Also provided are a high-indole-producing yeast capable of containing a high concentration of indole in distilled liquor, and a breeding method thereof. SOLUTION: Saccharomyces By using an indole-producing yeast belonging to cerevisiae) as a yeast for brewing distilled liquor, distilled liquor containing indole and having improved taste can be produced. Further, by breeding with a selective medium using the indole-producing yeast as a parent strain, a breeding mutant strain having a higher indole-producing ability than the parent strain can be obtained.
