To provide a method for including indole having a taste improvement effect in a liquor, in the method, yeast is caused to produce the indole, indole high production yeast capable of including high density of indole in a liquor and a breeding method thereof.SOLUTION: The invention is configured so that, indole production yeast belonging to Saccharomyces cerevisiae, is used as brewing yeast for a liquor, so that a liquid including indole and having improved taste can be produced. In addition, by breeding of indole production yeast on a selection medium on which the indole production yeast is a parent strain, a breeding mutant comprising an indole production ability higher than that of the parent strain can be acquired.SELECTED DRAWING: Figure 1
