Monitoring system (1) and method for controlling a dispensing plant (2') comprising one or more apparatuses (21, 26) connected to one another or to apparatuses external to said plant (2, 2'), by electrical, pneumatic or hydraulic lines (L, L', L"), wherein said monitoring system (1) comprises a plurality of sensors, wherein at least one of said sensors is positioned on at least one of said electrical, pneumatic or hydraulic lines (L, L', L"), and a monitoring unit (3), connected to said sensors, said monitoring unit (3) being configured to receive data detected by said sensors, determine the values and trends over time of the respective parameters of said sensors by comparing them with average values and/or trends to detect and verify the operation of said control system (1), and wherein said monitoring unit (3) is also configured to execute correlation operations between said parameters to verify the operation of said plant (2).
