When I attended the 2010 International Potato Processing & Storage Convention in Edinburgh tliis June I learnedabout tatties in the Scottish market. Consumers in Scotland eat more than 200 pounds of potatoes each year. That is much more than the 130 pounds consumed in the United States. One reason for the difference might be that potatoes are served many different ways in Scotland.
