THERE is probably no other single factor more responsible for the degradation of olive oil than improper packaging. It is well known that the quality and deterioration profile of extra virgin olive oil is negatively affected by exposure to air and light, therefore packaging is extremely important. It is with this in mind that Olives Go Wild, an olive-focused business venture set up by Linda Costa and Sandra van Schaik in 2006, has launched an innovative dispenser for olive oil. The Vacu-Fresh cylinder (pictured left) is a fully-recyclable cardboard tube containing a collapsible anaerobic bag filled with 1,251 of high quality South African extra virgin olive oil.
