JAPAN is the largest sashimi tuna market in the world and imports an average 375,000 tonnes of fresh and frozen tuna per year. It is also the world's largest producer of tuna, most of which enters the domestic market. While bluefin, bigeye and yellowfin are widely used for sashimi and sushi (raw fish dishes), skipjack is the main raw material used for processing various kinds of dried or bushi products. Japanese canneries also process high quality products using yellowfin and albacore, although lately, grade one quality albacore -and skipjack -- are also being marketed for sashimi, particularly through supermarkets.
