Swine erysipelas in skin: assessment according to meat hygiene aspect

Erysipelothrix rhusiopathiae was identified in muscles and/or organs of 8 of 9 pigs with acute erysipelas in skin lesions examined in 1998. In sections of the well-defined rhomboid, bluish-red skin lesions, histology showed a disseminated acute vasculitis and a perivascular supporating dermatitis and panniculitis. The currently valid Swiss Meat Inspection Ordinance which, in case of erysipelas in skin requires only the removal of the skin and allows the consumption of the meat, is not warranted from the point of view of meat hygiene.
