Proximate composition and biophysical characteristics of local soybean cultivars.

Laboratory studies were conducted to determine the proximate composition, mineral contents, protein solubility and soaking characteristics of seeds of the soyabean cultivars Wahab-93 and Kharif-93 (W-93 and K-93). In the case of proximate composition, the nutrients estimated for W-93 and K-93, respectively, included: protein (33.83 and 33.97%); fat (24.75 and 27.75); moisture (7.25 and 7.11%); crude fibre (5.33 and 5.66%); and carbohydrates (23.51 and 20.18%). Ash was found to be 5.33% in both cultivars. In case of mineral contents, W-93 contained higher sodium, potassium and copper contents than K-93. However, K-93 was richer in manganese, zinc, iron and phosphorus compared to W-93. K-93 furnished 480.09 kcal of energy, while W-93 furnished 465.26 kcal of energy. Protein solubility of W-93 was 18.81% and that of K-93 was 16.84%. The data for optimization of soaking characteristics indicated that W-93 had 134.78% water uptake in 10 h soaking period, while K-93 had 122.44% water uptake for the same soaking period. Soyabean stands among the nutritional foodstuffs and also have varietal discrimination among various nutrients, so such an evaluation is useful for their proper usage..
