A STRESSED ANIMAL MAY produce dark meat that looks dry, firm and unappealing to consumers. They favour bright, red cuts for perceived freshness. That means dark cutters constitute a direct loss to producers, up to 55 cents per kilogram. Given averagehot carcass weights of around 367 kilograms, producers stand to lose more than 200 per dollar animal. Precautions are taken to reduce these costly dark cutters by keeping cattle calm. But according to a benchmark study by the University of Guelph on Canada's slaughter cattle transport conditions, more can be done to keep stock relaxed.
