Using up the stores in your freezer is easier if the fruit has been packed well. Sort it into suitable-sized portions and place in sturdy freezer bags - these are thinner and don't catch like zip-lock bags, so you're less likely to end up with the bottom of your freezer covered in escaped fruit. Label the bags with the date and type of fruit. Don't add water to fruit when you cook it, especially after it's been frozen - it contains enough moisture to steam itself. Next time you stew fruit, avoid boiling it to death in gallons of water. Instead, cook it gently over a low heat with the lid on, stirring frequently to stop it catching on the bottom. Cooking the fruit with a lid on the pot means none of the juices will be lost, and adding flavours and spices such as vanilla and cinnamon will be twice as effective.
