I have a passion for all things passionfruit. Not only are the flowers exquisite, the fruit is tangy and sweet, with a flavour all its own. It's also decorative and fun to cook with. Containing vitamin C, vitamin A, potassium and lycopene, passionfruit should be considered a superfood.Passiflora edulis hails from South America where it is known as maracuja. I came across it in Panama 15 or so years ago and bought so much of it at a local market it took me about three days to process and freeze it all. Every cheesecake and pavlova I made for six months thereafter was decorated with a thick layer of sweet, gelatinous, orange-coloured passionfruit syrup studded prettily with black seeds.
