Inline analysis of meat composition has become increasingly common in meat processing over the last decade. Today, any supplier of machines or lines for raw material handling needs to be able to supply solutions for inline batch optimisation. One of several obvious reasons is the potential to save raw material costs on batch optimisation due to the considerable batch to batch variation for meat raw materials. Successful installations in meat processing lines require multidisciplinary skills and capabilities for the solution provider. The first inline non-contact applications for fat analysis in ground meat were developed in 1996. Since then, only a very few instrument manufacturers have developed instrumentation suited for the challenging measuringsituations and environment experienced in meat processing.
