Comparison of amylogram properties among several subspecies of rice.

The amylogram properties of 24 rice cultivars belonging to the temperate indica, indica and tropical japonica groups were evaluated. The peak viscosity and breakdown properties of the Tongil-type cultivars (temperate indica) were highly similar to those of the japonica varieties, with final viscosity, pasting consistency and setback values lower than those of the typical indica and tropical japonica types. Peak viscosity was positively correlated with trough, whereas breakdown was negatively correlated with setback in all the tested rice cultivars..
