Effects of functional tray in MA packaging on the absorption of ethylene, odor compounds, and quality of broccoli florets.

An experiment was conducted to investigate the effect of charcoal paper tray in modified atmosphere (MA) packaging on the absorption of detrimental gas and quality change of broccoli florets, and to examine whether it could be used as an environmentally-sound functional tray instead of the present plastic tray. The O2 content of 4-5% was maintained in all treatments during storage, but the CO2 content was lower in the pulp and charcoal paper treatments than in the control. The ethylene content, also, was 0.77 ppm lower in the charcoal paper treatment than in the control after 15 days. Additionally, acetaldehyde and ethanol contents were approximately 2 times lower in charcoal paper treatment than in the control and pulp paper treatments. The Hunter 'b' value, an indicator of yellowing, increased quickly after 10 days in the control and pulp paper treatments, but that in the charcoal paper treatment was almost not changed during storage. The ascorbic acid and total chlorophyll contents decreased remarkably in the control and pulp paper treatments after 15 days, but these in the charcoal paper treatment were maintained highly during storage. The marketability was extended from 5 to 10 days. Weight loss in charcoal paper treatment was slightly higher than that in the other treatments, but marketability loss was not caused by weight loss..
