摘要

Although there have never been any foodborne disease outbreaks associated with fresh mushroom in the United States, recalls have occurred that were attributed to contamination with the human pathogens Listeria monocytogenes and Salmonella species. Thus there is a need to consider possible routes of contamination and the fate of human pathogens throughout the mushroom growing process.
