THE HORSEMEAT SCANDAL was the industry's wake-up call. While it might not have posed a threat to public health, the knock-on effect in terms of cost and trust has been vast.Nearly three years after the scandal first came to light, although relationships arestarting to be rebuilt, there is a greater expectation for meat processors to demonstrate transparency and compliance. Even a small bit of plastic in a sausage can create bad press, result in expensive recalls and damage reputations,and firms continually face threats from other foreign bodies, microbial pathogens such as Campylobacter, and different types of meat creeping into their products. Added to this is an increasing risk of food terrorism.
