Consumers are prepared to pay more for beef and one reason for this is the improvement in quality. Barry Carpenter from the USDA said that according to recent research consumers are seeking taste, nutrition, price and value, food safety and convenience in their food and these have become the drivers for the USDA quality standards. Of all the driving factors, he said that taste came out on tope for beef. However, Mr Carpenter added that consumers also want low prices and they want improved quality forthe same price as well as a greater consistency in the eating quality. "The consumer expects the beef to be safe when they buy it," Mr Carpenter.
