Joel Haggard and a team from the USMEF in Hong Kong have carried outfield trips in China to back up their research. The following series of articles highlight some of their most important findings. Sichuan Province is the largest meat-producing province in China. Total meat output in 1995 was 6.3 million tons accounting for 12% of total Chinese meat production. Of this 5.3 million tons, oc roughly 85%, was pork. This equates to 78 million marketed hogs, or 16.3% of China's total slaughter. Growth has been immense. Every year for the past 18 years, Sichuan's hog population has increased by three million hogs, or an equivalent of 200,000 tons of pork meat.
